It should work, you know what you need and adjust on the trail.

That sounds fine to me. Maybe ditch the fleece + vest and pick up a synthetic-filled jacket for less weight and comparible warmth. Not a dealbreaker either way, and you can just save your $ and use what you have.
What are you doing for your head and hands? I finished up my SOBO on January 11th, and ended up carrying a fleece balaclave, a second thinner fleece watch cap, glove liners, fleece mittens, and OR shell mittens. Everyone's got their own system though. I'd reccomend carrying a second hat and pair of fleece gloves or mittens just in case till you get past Mt. Rogers.

It's all wrong, all wrong!!!!! Terrible choices!!!! :p
Just kidding of course. Sounds good. I think you'll really like the Duofold... I've been very happy with my Duofold gear over the years. In the end, if it works for you, then fantabulous.
just a suggestion on format, What a lot of people did in the past was to list everything in 2 columns. with the approx. weight of the item on the left column and the description on the right column.

ps. I did not see any pants on the list.
