Can anyone think of some good desserts? I'm looking for a wide variation. (Heavy, light, no-bake/fast, twiggy-fire/long time, etc...)

I dehydrated cubes of cake once, and was surprised at how tasty they were, just as is. No rehydration required.

Another one that's good, I think I got from Sarbar, is to put chocolate chips, graham crackers and shredded coconut in a ziplock. In camp, put the bag into some boiling water, just to melt the chocolate. It's really good! And an easy, lightweight alternative to s'mores.

Or just bring a Snickers bar.

You might want to check here. There is some good information about baking cakes and muffins etc. I have had some good success with gingerbread cake and angel food cake.

I've been on a cheesecake kick lately. You gotta suck it up and carry the kind with the topping, cause that's heaven in a pot.

I call 'em mexican s'mores:

flour tortilla
mini chocolate chips
mini marshmallows

roll up burrito style and heat over an indirect flame/campfire. eat burrito style. Kinda of like a s'more...

How much easier does it get than some marshmallows, a Hershey bar, and some grahm crackers? Or just some Hershey bars?

Peanut Munch bars. Pudding in a tube. Just add water angle food cake cooked in a small cake tin that walmart sells. Just add water Jiffy Biscuit mix with Jam (take a few single tins the next time you have breakfeast out) or Honey and butter (KFC pouch or Mini Bear). Cup of Coffee with some Ovaltine (makes a poor man's mocha Java can add a peppermint also). I eat jelly beans during the day for a snack and if I still have some left over from that days rations, then Jelly up! And if all else fails, just a couple of tootsie rolls.

No bake cheese cake (my favorite, I've even made these at 16,000' already and passed some around to some shocked Europeans)
Bake a box cake in an orange (take out the orange and use 1/2 the shell as your cooking pot and put it in the coals with aluminum foil on top, good stuff)

Lazee used to make a "wish ice cream sandwich" Somewhere he found a place to buy the chocolate outer shells of an ice cream sandwich and carried them and then would put a little sugar and milk spread on them, not bad.

on the heavy side, baked fruit...

core an apple. fill with brown sugar and cinnamon candies. wrap in a piece of aluminum foil, bake in coals until soft (20-30 minutes).

peel a banana, slice in half lengthwise, spread some jelly on one half, reassemble it, wrap in foil, bake in coals.

heavier still, bring along a loaf of bread, some cooking spray or butter, some pie filling, and those long-handled pie irons.

on the lighter side, freeze dried ice cream or various mountain house desserts (cheesecake, raspberry crumble) are all good too.

rice pudding

instant rice, dry milk (Nido), sugar, raisins. Add boiling water; cozy until rice is soft. Either eat warm or put the pot or freezer bag in cold water to cool it off.
