Anyone have any experience leaving a car at US7 near Sheffield? Is there a lot? Know of any problems or issues?

There's a garden center just north of where the AT crosses Rte. 7. (No trailhead parking lot that I recall, at least not on Rte. 7 directly.)
I'm guessing the garden center might be amenable to leaving a car for a few days, if you talk to them first. If not, there are other businesses on Rte. 7, north of there. (I walked about half the distance from there to Great Barrington.)
That's correct, no parking at RT 7. The garden center (Corn Crib) are nice folks, they may help you out.
Other parking areas that are OK for short time periods are Sheffield-Egremont Rd (Shays Rebellion Monument) about 3 easy miles west of Rt 7 (Trail-South), or Rt 23, about 6? miles Trail-North of Rt 7.
