I ordered a sea to summit pancho that covers me and my bag. Do you really think that would work or should I just go with a waterproof jacket and a pack cover?

Pancho may hike with nachos or tortillas but a poncho will keep you dry!

I had a poncho and its ok... doesnt work so well on windy days...

I reserve my poncho for hot summer weather, when it's too hot for a jacket, no matter how hard it's raining.

As Cuffs said, and poncho isn't great for windy conditions. It's not great for keeping you warm, which is the main reason for having a rain jacket. It's not great for wearing around camp.

In Florida, however, a poncho is probably a great thing to have!

I take my Pancho every time I leave my Villa, but I prefer a rainjacket to a poncho

I think I am going to go with the jacket and pack cover. How well do the pack covers work?

Pack covers aren't foolproof in a long, hard rain. People generally put things that absolutely have to stay dry--sleeping bag, electronics...--in a waterproof stuff sack or plastic bag.
