With the Hiker Hostel (http://www.hikerhostel.com/) (Georgia) in mind, can anyone recommend or know of a similar place in North Carolina?
I am looking for a bunk, shuttle services, etc...

Lone Wolf is right. If you want a trail hostel in North Carolina, the best one right now is Standing Bear Farm, just north of Great Smoky Mountain National Park.
The Nantahala Outdoor Center near Bryson City NC also has bunkhouse accomodations available for hikers.
And by springtime, Ron Haven, who presently operates several very hiker-friendly motels in Franklin, NC, may well have a hiker hostel operating there as well.

In the meantime you can get an inexpensive motel room and a free shuttle to the trail or an inexpensive shuttle elsewhere.
Is Cody House still open? They do shuttles.

That sucks. Hot Springs could use a regular hostel. Elmer's is often full and the other options more expensive.

I stayed there one night in '97 when Elmer's was full. Next night Elmer put me in the basement!
