Gear so far:

- camp sandals: 12oz
- coffee filter assembly: 1.5 oz
- five days coffee: 0.5 oz
- GSI cup: 3 oz
- penny stove:
- cook pots & top: 13 oz
- two full nalgene bottles: 78 oz
- sleeping bag: 48 oz
- water filter: 15 oz
- ridge rest: 22oz
- tarp tent: 24 oz
- toiletries (est): 32 oz
- food (not sure yet)
- backpack (isn't finished yet)

Hi JenSkim, Clearly you need your coffee (top of the list).
Where will you be going and what are the expected temperatures. For most of Texas I'd need a freeze dried air conditioner.
You need to finish your list, so I'll comment on the weight of the stuff you have so far.
Ridge Rest: 22oz?? A short (20"x48") ridge rest is 9 oz. Can you cut this down to narrower and shorter?
Tarp tent: Good!

12 oz camp sandals is heavy, there are lighter things out there (or do without).
Sleeping bag, 3 lb is heavy.
Water filter -- using iodine or aquamira it would be less than an oz.
Toiletries 32 oz!!?? This is a lot. If you can't eliminate some of this, carry smaller amounts by repackaging into much smaller containers.http://www.backpackinglight.com/cgi-bin/backpackinglight/xdpy/sf/Packing%20Systems/Storage%20Containers/index.html?
Pack: if you get the weight of everything else low enough you can get by with a very light pack. Don't get a 5 lb pack.
Add clothing and rain gear appropriate for where you're going.
