Okay, one more! I've been busy lately!!!
Cous Cous with Chicken and Artichokes
serves 1
Note: my "dried chicken" is chicken, turkey and TVP mixed together. I add the TVP (2 parts meat, 1 part tvp) to make the meat stretch a little further... tvp is cheap, the canned meat isn't really.
1/4 cup cous cous
1/4 cup dried artichoke hearts
1/4 cup dried chicken
1 T dried bell peppers
1 t vegetable or chicken bullion
1 t dried thyme
olive oil, salt and pepper to taste
At home: combine all of the ingredients in a zip locking plastic bag.
In camp: add hot water to cover, stir well. Let stand for 5 minutes. Stir again and eat

Looks very good!
With all of the recent menu additions as of lately, I'll definitely be able to mix up the camping fare!
One quick q though...
Do you still dry the chicken even though it is pouch chicken?
A little confused on that since it is mixed with TVP...

I dry canned chicken... then mix it with TVP to make it go further. This is optional of course.
If you are using the pouched chicken, just add it after everything is rehydrated - don't dry it. You could dry it, but you don't have to...

i'm sure i missed this somewhere, but do you dry canned chicken b/c of convenience or is its fat content lower than that of home-cooked chicken?

Chicken with couscous is on of my favorite meals on the trail. I get the couscous already flavored.

I dry it for the weight. The canned chicken dries well (do not dry any other! Home cooked does not work. We tried it.) and begins to rehydrate if you soak it a bit while oyu set up camp. Then cook it. No problems for me.

The nice thing about the canned chicken is that I dry the broth along with it for a little extra flavor. I haven't tried to dry home-cooked (yet?)

I dry it for the weight. The canned chicken dries well (do not dry any other! Home cooked does not work. We tried it.) and begins to rehydrate if you soak it a bit while oyu set up camp. Then cook it. No problems for me.
Home-cooked dries very well and comes back nicely with three variables met. The first is that it is cooked or stewed in a sauce. The second is that the meat should be shredded before dehydration. And the third is that it needs a longer rehydration time (30 minute minimum) with boiling water and a cozy. Rehydrating in a container such as a Nalgene water bottle or Ziploc container (the kind with the screw on lid) creates a bit of steam pressure which aids in rehydration.
Di, is there anywhere that you know of to buy already dried artichoke hearts?
Yes. I'm stalling on the dehydrator purchase. And I'm lazy. ;)

As far as I can tell no. Even in googling it, all I get is my own references too it (eventhough I KNOW Sarbar has also dried them and blogged/posted about it). Why is no one doing this!!!!???
Send me your address. I'll send you some to try. I'll be running a few more cans through the dehydrator next week. Easy enough to add one for you. :)
You CAN bring them on the trail without drying them... store them in a ziplock and eat them the first night.
Also, I know you have a special diet... You could replace the chicken in this recipe with chicken-flavored TVP (if you can stomach it) and a little extra bullion.

Thanks. If they left the red coloring out it would be good.

That looks like the same thing as Bacos. No need to order online.

I was half kidding about the flavoring. The idea of making TVP (the anti-bacon) taste like bacon is funny to me.
And I say "half kidding" because as far as I'm concerned, when backpacking everything should taste like bacon. Or just be bacon. Chocolate covered bacon. And I know where to get that...
We'll talk more about this later.:D
