Looking for some suggestions for a quick and easy breakfast other than oatmeal and granola.

grits with bacon bits, bagels, ziplock eggs with bacon bits.
those are my favorites.

Or couscous- just boil water, put your dry couscous in a mug, pour the hot water over it, cover it for a minute or two, and voila! Couscous. Which, by the way, is really good with brown sugar and dried cherries/ fruit.

dried fruit, minute rice, brown sugar, nido milk, and cinimon. mix in a baggie before trip. just add water.

Although, if you really want something easy, I think Downhill had the right idea. Snickers bar for breakfast is not bad.
My own theory is that you should have breakfast for dinner and dinner for breakfast, because you need more strength during the day. I never actually do that though- just oatmeal and snickers for me, nice and simple.
And for me, I get sick of poptarts and granola REALLY FAST.
No cook: tortilla with peanut butter or peanut butter/jelly mix

OH and I forgot, BACON. Either precooked bacon, or frozen bacon in January/February. I haven't actually tried the frozen bacon idea yet, but hopefully it'll work, and it won't attract every single bear in Georgia.
fig newtons

What are honeybuns? Are they like cinnamon buns, or gummy bears? Or maybe completely different? They sound good though...
I was going to say fig newtons. I did a sleeve of them almost every morning on my PCT and CDT thru-hikes.
For weekend backpacks..a trick I've used that is actually pretty decent is an "omelet" in a bag. Add your eggs, salsa, cheese and onions (and maybe a little cream) into a heavy duty ziplock all mixed up. Add bag to hot water in your cookpot when ready to eat.
Works great for a first night out in cool weather. Mmmm....

check out the lil' debbie section of snack bars. yeah, kinda' like the luxury of a cinnabon(sp?) on the trail.

Bacon. Bagels with honey. more Bacon.
Fig Newtons sounds great my mouth was watering on my last hike everytime I saw that package on the table, other wise cereal with pdr. milk or quick cook oatmeal with lots of different types of dried furit thrown in and a couple of cups of instant black coffee.

You can now get apple and blueberrie varieties of bar cookie and mix them up with the Fig Newtons for a change of pace. Spam comes in singles and that on a bagel is very good too!
pancakes!! the just add water kind. cook them in the lid/ frying pan of your cookset. Get single serving syrup at Mc'donalds. Yum!
meusli (raw oats, walnuts, almonds, raisins, dates) and powdered milk. Oatmeal without cooking, and it does taste different. I don't add sugar, but sometimes add dried cherries. Maybe an acquired taste, but I eat it almost daily, on trail or off. Good carbs, fiber, monounsaturated fats.
ProBar, Raw Revolution Energy Bar, dried fruit, handful of dried nuts and/or seeds, supplements, start drinking protein powder and Emergency w/MSM drinks, green drink, or some combination of above.
I know you don't want to hear it, but with a little creativity you can go so many different directions with fast cooking inexpensive grains, LIKE OATMEAL, cous cous, millet, etc. Don't just think, "OK I have to eat that prepackaged artificially flavored gloop again this morning. Wander around the grocery store and look for ways to have a different twist on oatmeal each time you enjoy it.
bagels with cream cheese, grits with cheese and bacon bits (the real bacon bits come cooked and in a resealable bag near the salad dressing now), granola with dehydrated fruit and powdered milk, poptarts, nutragrain bars when i'm in a rush.

yeah, that is good stuff. i think it is bob's red mill that i eat occasionally and add some craisins! forgot about that. i usually just add some water.
Grits, Snickers bars, Pop-Tarts, torilla with Nutella or peanut butter and sliced banana and a recent new favorite, Emerald Breakfast Blend Trail Mix.

I did not want to have to cook in the am - so ate cold cereal, portioned in town into meal size servings and carried in a ziplock, most mornings. Include powdered milk in the ziplock & use the ziplock as your bowl - then as your trash bag for the day.
Suggest you look for NIDO brand milk - powdered whole milk from the hispanic food isle of most groceries, more calories due to the fat.
Cereals - any that do not crush - Grape Nut Trail Crunch was my favorite.
Other alternatives - prepackaged muffins. They are offered in several sizes - some have as many as 700 calories each.
Previously noted HoneyBuns and PopTarts work well to. I've seen Honey BUns with 900 calories.

Another vote for fig newtons. If you can't find them for some reason, poptarts, or a tortilla with cheese or pb.

Shredded wheat. Pack dry with some dried fruit and dry milk. Add water, hot or cold.
Cream of wheat with some dried apples.
Shredded hash browns (the boxed ones). Add bacon bits or diced spam and dried bell peppers.

Hardboiled eggs packed safely works for me. Mix them with any combination of choices already suggested.

Lots of great ideas have been shared. Here is another approach...
My wife and I each prepared a breakfast shake before going to bed each night throughout our thru hike. Ingredients included Instant Breakfast (2-3 packets Chocolate or Vanilla) + NIDO Powdered Milk + Protein Powder (Chocolate Muscle Milk) + 2-3 tablespoons instant coffee.
This approach started each day with lots of calories and got us out of camp quickly.

I hiked 6 days a week on my thru and 5 of those days I had either instant oatmeal (uncooked) or cereal (usually grape nuts) with dry milk and honey and a cup of tang. The other day was usually something from a bakery in town.

No one has mentioned cereal. . . I have a friend who packs cereal and powdered milk in a baggie, then just adds water, tosses it around a bit, and eats right out of the baggie.
Also - and this is my favorite - a big (preferably red) apple, core it, and stuff it with peanut butter (plain or crunchy) and you can add raisens to that if you like. I eat it while I hike.

Yep. Bacon works well too.
bit texas cinnamon roll, honey bun, or a bunch of fig newtons.
plus a handful of chocolate covered coffee beans
i try to keep it simple and not force myself to heat water if i want to just wake up, break camp and roll out
It's my current preferred way to begin a day when I can't devote much time to preparing breakfast.
Preparation
Put 1 cup into a bowl, boil 1 cup of water, pour the boiling water in the bowl, cover with a salad plate and let stand for about 5 minutes before eating.
Clean up
Rinse everything with water and put it in the dishwasher.:)
.......put it in the dishwasher.:)Clearly, this is not an ultralight option.:D
I forgot to mention I boil the water in my microwave.

BullDawg, that was a shameful somewhat un-subliminal advertisement you posted. As for muffins, how do you cook them? Do you end up making cakes, or do you have some kind of backpacker muffin tin?
REALLY GOOD- (if you want to cook) scones. Either the oatmeal scones with honey from the NOLS outdoor cookbook, or awesome ones I make at home that require heavy cream (NIDO, prehaps) and butter. I'll post the recipes later, if I remember.

Tofu is delicious if you know how to cook with it. Even Mr. Meatatarian (hubby) likes it. We marinate it and roast it. Tofu marinated in cinnamon and apple cider for example, makes a wonderful, high protein breakfast treat. Silken tofu can be used as an egg replacer and makes delicious smoothies.

Spam & Eggs
Serves 1
1 single serving packet Spam (3 oz)
1 sun dried tomato, cut up (as small as you can get it)
2 fresh eggs
1-2 packets (1-2 tablespoons) Parmesan or Romano Cheese
1-2 tablespoons vegetable oil, or 1 packet
At home: put the eggs in a camping/hiking egg carrier. Put the sun dried tomato and cheese in a zip locking plastic bag. Carry the oil in a screw top container.
In camp: Add oil to the pan. Dice the Spam into 1/4 inch dice (you want it small).
Fry for a couple of minutes, until the spam begins to brown, then add the eggs and sun dried tomatoes.
Scramble. Cook until eggs are done. Serve topped with Parmesan cheese.

Under no circumstance is the combination of cinnamon, apple cider, and tofu ever a "breakfast treat".
Unless it's deep fried in bacon fat, wrapped in bacon, and dusted with bacon salt.
Tofu is........treat. The words "tofu" and "treat" should never, ever be used in the same sentence. Forcing someone to eat tofu should be considered something akin to waterboarding or other various forms of torture. Pretty sure the Geneva Convention or NATO or somebody outlawed it's use some years ago. If they didn't, they should.:D
I remember on my NOLS instructors course, five weeks in, with only a couple of days till we were done. The instructors had vehicle access during the final stage of our rock climbing camp. Some of them left and brought back some fresh groceries and they made a stir fry and offered us some. I hadn't had meat in over a month, so I spooned up this delicious cubed piece of what looked like chicken and joyfully popped it in my mouth.
And it was ****ing tofu...
I was gracious enough to appreciate the hot food that someone else had cooked up. But inside, I was just plain pissed for having my food fantasy so bitterly crushed...
A pox on those who think tofu in any way substitutes for meat.

lol - don't knock it until you try it... the beauty of tofu is that it takes on flavors nicely and provides you with a little protein at breakfast. I just have one more field test with the roasted apple tofu breakfast and then I'll share the process. A lot of what makes it a treat is how it is cooked prior to dehydration. Vegan foods can be as equally delicious as non-vegetarian options if prepared properly... promise. Actually, I should just send you some... lol :D

Steak wrapped in BACON!
How about the Silo burger.. (I've mentioned this elsewhere)
1/2 pound of beef
Shredded Pork
Topped with BACON!!!!!
Yes. Cow and TWO forms of pig.
Has hot sauce and pepper jack cheese.
Add some sweet potato fries, wash it down with Old Chub and I have achieved post-hike Nirvana.
To make this thread related...oh hell. I can't. Sorry. :sun

Yawn... boring... I prefer something like Steak Oscar over a pedestrian bacon wrapped filet... a little fresh crab, a medium rare steak, some baby spring asparagus and a little drizzle of Bernaise. Simple perfection. Now if only I could do that in the backcountry. Alas an entire steak just doesn't dry or rehydrate well.
Back to breakfast. I found some wonderful apple-cinnamon breakfast pitas at the store this week. Tobias (he's 8) loves them with peanut butter for breakfast.
With some powdered egg and powdered milk in your staples it's really easy to make French Toast on the trail too. Just pick up some bread along that way. If it gets totally squashed - no worries - it will come back in the egg mix.

Why not? I freeze a steak and put it in my pack the first morning out almost everytime I go out. You should see the looks on the faces of all those thru hikers every spring when I'm searing sirloin tips in my cook pot or cooking a while T-Bone over a camp fire. I've taught quite a few thrus that steak the first night out of town is a possibility all the way to Maine!

We used to do that... but I don't much of a chance of late because I am testing recipes when I am in the backcountry. Steak doesn't suit a vegan cookbook... lol.

Proscuitto and Bacon aren't quite the same thing... but proscuitto and melon or a nice cheese certainly is tasty. I did a whole tray of melon wrapped with proscuitto for our Spring camping gathering.... 60 campers sure gobbled it up quick (but were were also in a campground - makes a big difference).

Lauries right! (or is it with an apostrophe?) We're complete and utter boorish bohemoths. You could probably just post any recipe and as long as it had copious amounts of bacon, it gets a gold star. We'll all die of heart attacks at age 25 (except Laurie).
But I don't mind, because at least I can eat BACON.
I'm serious about the heart attack thing though.

lmao.... I already made it past 25 and 35 and 40 so no chance of me dying of a heart attack until I am in my mid 40's. It will more likely be the steak, crab and Bernaise sauce that kills me though... not the bacon. That said, maple bacon biscuits are yummiest on hiking trips. All things in moderation.

[saying it in the most monotonous voice possible] ... I alternate between Fig Newtons, oatmeal, PopTarts, and granola bars, along with hot tea or hot coffee. I'm not one for much diversity or excitement, and can be very satisfied with just those. For a treat, I might occasionally make pancakes with one of those shake-n-pour mixes.
I pretty much keep things as simple as possible.

I have a One Egg Wonder pan that for one person is nice. But honestly, the fry pan lid to my GSI Backpackers Set works great (2L pot). The set has two lids - one is plastic, the other is the frypan - so you can take one or both depending on the trip :) It is nonstick so easy frying! If I am doing pan bread I can use the plastic lid on it as well.....

bit texas cinnamon roll, honey bun, or a bunch of fig newtons.
plus a handful of chocolate covered coffee beans
i try to keep it simple and not force myself to heat water if i want to just wake up, break camp and roll out
I've decided to bring enough no cook things that I don't even need to break out the stove if I don't want to three- four mornings of each week. I'm sure I'll boil water for tea anyway though. (For the first month of my thru, which'll be cold) The other three days I'll definitely at least be boiling water, or eating something fresh from in town.
Sample week (will probably have less variation each week than this, but, whatever):
Day 1, Tortillas and peanut butter. Day 2, Bacon and breakfast couscous with brown sugar and dried cherries. Day 3, Bagel with honey or cream cheese. Day 4, Grapenuts. Day 5, Biscuits (perhaps cooked the night before) with honey. Day 6, maybe pancakes and syrup. Day 7, torillas and pb again.
