View Full Version : how to dehydrate northern kiwi

My kiwi vine was good to me this year, and I've got a bumper crop. I'm thinking of dehydrating at least some of this. Northern kiwi (Actinidia arguta) produces small fruit roughly the size of a grape but usually a little elongated. The skins are edible.

I'm thinking of slicing the fruit in half lengthwise. Should I dip in lemon water to prevent browning? I don't normally use sugar when I dehydrate fruit--do I need to in this case?

I'd love to hear from anyone who has dried hardy kiwi successfully. Or has other good recipes for kiwi.

It gets very sour and looks like boogers. I'd sweeten it. You won't need lemon juice.
