So far 11 people have completed the entire trail. Only 3 of those were done in one shot however. There is another thru-hiker out there right now due to finish soon, and at least 3 more will be attempting it in 2013 (including myself). So if all goes according to plan, by 2014 there will have been 15 people that have completed the entire trail.
I followed Nimblewill Nomad's journaling................interesting trail.
Wonder how well it is marked at this point.
Just in case anyone would like to read Nimblewill Nomad's journal. He also has a book available, but I think it is currently sold out.

Going back to your original question: How many through hikes, the answer is three.
They would be Ed Talone, Andrew Skurka and Eb Eberhardt (aka Nimblewill Nomad)
The rest of the 8 people who completed the NCT did it in a Section Hiking fashion,
doing different sections every year for several years. Whereas a Through Hiker
completes the trail all in one hike, although the hike could be broken up a little bit.
For instance when someone on the AT goes from Georgia to Maryland, then if it's late
in the year, they go from Maine to Maryland, to avoid the colder weather later in
the year in Maine. That's still considered a Through Hike, even though it's broken
up a little bit.
Of the three people who have through hiked the NCT, Andrew Skurka is the
only person doing it in a Unassisted Fashion. Ed Talone had a van following
him for much of the trail because of the medical condition of his hiking partner.
Nimblewill had a van following him during the early parts of his hike in
North Dakota.
There is still yet to be a female complete the trail in a through hiking fashion.
