I have always been a "water rat." Love swimming, kayaking, rafting... I love being around water. When I was a kid, my grandma just could not get me out of the water. So, she started calling me her water rat. That is how I got the name.

The smallest large screen tv was where it always has been. It was just buried under a pile of junk.
Tater machine restocked.
Bear is wearing shorts (DO NOT ask how I got him to do that) and is out of the pool. He's doing dishes right now.
Someone else is just going to have to fix the SILWF. I am not going anywhere near that pool Rocketsocks left something else in the pool when he found out about the barracudas... Ewwwww.

By request from Water Rat for a Shelter Mouse recipe -

1 large garlic clove
3/4 teaspoon salt
2 tablespoons soy sauce
2 tablespoons hoisin sauce
2 tablespoons mild honey
1 teaspoon Asian sesame oil
Pinch of cayenne
3 lb Shelter mouse or chicken wings (see cooks' note, below)
1 1/2 tablespoons sesame seeds, lightly toasted
1 scallion (green part only), finely chopped

Put oven rack in upper third of oven and preheat oven to 425°F. Line a large shallow baking pan (17 by 12 inches) with foil and lightly oil foil.
Mince garlic and mash to a paste with salt using a large heavy knife. Transfer garlic paste to a large bowl and stir in soy sauce, hoisin, honey, oil, and cayenne. Add Shelter mouse to sauce, stirring to coat.
Arrange Shelter mouse in 1 layer in baking pan and roast, turning over once, until cooked through, about 35 minutes. Transfer Shelter mouse to a large serving bowl and toss with sesame seeds and scallion.

Water Rat - Here is another recipe for Shelter Mouse. Being a Rat is this hitting close to home?
:)
Makes 4 to 6 servings
“You won’t have to clean the fryer or hide from your doctor. … Need I say more?” —Emeril Lagasse

4 pounds Shelter Mouse, wing tips removed, separated at the joints
1/4 cup fresh squeezed lemon juice
1 tablespoon freshly ground black pepper
1 tablespoon garlic powder
1 tablespoon onion powder
2 teaspoons salt
2 teaspoons dried thyme
1/2 teaspoon cayenne
4 tablespoons butter, melted
Your favorite sauce, for serving, such as barbecue sauce, ranch dressing, or blue cheese dressing, optional

Preheat the oven to 500 F.
Line large rimmed baking sheet with aluminum foil. In large mixing bowl, combine shelter mouse and lemon juice and mix thoroughly. Add pepper, garlic powder, onion powder, and salt. While crushing between your fingers, add thyme. Mix again and add cayenne and butter. Mix thoroughly, then transfer shelter mouse to baking sheet and arrange in one layer. Roast in oven for 10 minutes, rotate pan and cook 10 minutes longer until mice are nicely browned and cooked through. Serve alone or with your favorite dipping sauce.

Wow - I remember something the gloves met a guy with a skin disease from processing and eating muskrat years ago.

possum meat taste like after it has been roasted...
1. ALWAYS wear gloves (latex or rubber) when processing wild game. Wild animals may be caring diseases such as trichinosis, or tularemia, or salmonella, and the gloves will protect you from these potential diseases while handling the dead animals. If the meat is thoroughly cooked, then it can be safely eaten even if these diseases may have been present in the raw meat.

2. Process the dead animal as soon as possible after it has been slain:
1. Drain off all the blood by cutting the left jugular neck vein, or cut off and remove the animal's head. Hang small animals upside down by their hind legs, or arrange larger animals so they are facing downhill on a slope.
2. Carefully remove all the internal organs without spilling their contents on the meat. Discard all the internal organs (except the ones you know are edible).
3. Most smaller animals (groundhog, opossum, porcupine, raccoon, squirrel) have glands that are located in their small of the back and under each foreleg. Locate, remove and discard those glands. (Note: Groundhogs have seven or eight of these small glands.)
4. Skin the animal and remove all the fat. The fat will turn rancid very quickly and it must be discarded (or it should be processed immediately).
5. Do not let the exterior hair or fur of the animal touch its inner meat as it may transmit an undesirable flavor to the meat. If any loose animal hair accidentally falls on the meat, remove and discard the hair immediately.
6. If the animal was shot, remove and discard any bullet damaged meat and dried blood from the bullet wound area.

3. Clean and cool the meat as quickly as you can. Plastic freezer bags may be filled with ice, snow, or cold creek water. The meat of small animals may be placed between the sealed bags. Or the sealed bags may be placed inside the body cavity of larger animals. If no cooling bags are available, prop open the body cavity of larger animals with some sticks.

4. The meat of wild animals should be well cooked to make it is safe for human consumption (similar to pork).
1. Small animals (such as rabbit or muskrat) may be processed in a manner similar to chicken.
2. Large animals (such as deer or bear) may be processed in a manner similar to beef.

When does HikerBoy get back? I was going to post an update tonite...so here goes.

HB57 is zeroing today and tommorrow due to a smashed left ankle in the 100 mile. Today spent most of day at Gulf Hagas AMC Center, and I forgot what town, to rest it and resupply. This does delay our hook up but not really changing my plan as I am still recouping from a knee in New Jersey.
He said that the 100 mile had more than a hundred people. He played the Guitar with folks, and was glad to hear we have some new patrons.

I didn't say anything about the new menu;)

OK, here's my contribution to the recipe contest.

UltraLight Hikers Delight - Sweat Tea!!

(Adapted from WikiHow - the how-to manual YOU can edit!)

In the lazy, hazy days of summer, when it's too hot and too much work to boil water, this is a great way to make tea. You, too, can enjoy a nice, guilt-free glass of sweat tea, just using items commonly found in shelters and the awesome power of Mr Sol:sun!

== Ingredients ==
*4 cups of cold water
*4 dirty hiker socks, aged at least 1 week - 10 days

== Steps ==
1. Wash and sterilize a clear container thoroughly with hot water and soap -- Aw, gotta love those jokesters at WikiHow!
2. Fill the container with 4 cups of cold water. Use the most purified water you can get your hands on. Here's where your SILWF comes in handy!!
3. Add 4 dirty, well-aged socks. Ask your shelter buddies to contribute (or if you're a thru-hiker, just 1 sock will do). Cover the container securely.
4. Place the container in direct sunlight for at least two hours. Taste the tea periodically to see if it's ready. When your gag reflex rockets to approximately 2x faster than your swallowing reflex, you're done!
5. Remove the socks and put back on feet. Make sure you don't mistakenly don someone else's. That would be just, really gross...
6. Pour into glasses, mix with sugar (optional) and serve!
7. Drink all the tea within a few hours.

== Tips ==
* International style sweat tea can be easily made if you're lucky enough to be bunking with the occasional Aussie, German, Brit...the possibilities are endless and exciting!
*Try adding a few stalks of fresh mint leaves and/or a few slices of lemon for added flavor. Or just skip this step and pour in that half pint of Captain Morgan you've been hoarding. Come on, we all know you have it stashed away at the bottom of that stuff sack. Yeah, the red one.
*For genuine southern style sweat tea, say "y'all" at least 5 times while serving.

Enjoy, Y'all!

Go away for a few days and it's a full days work catching up on what's happenned in the cafe. I just marked the other 2000+ posts as read.
Leaving again within 24 hours for another couple of nights away.
Last trip was car camping (1200 miles in 3 days 10 of them on the middle day).
Met a former thru hiker by the look of his weight loss....:D

By the way the stomach under the AT t shirt is part of a plan to not look like this guy when I get to Katahdin.

Good to see the cafe looking so clean, but the shelter mice menu doesn't do a lot for me.
This is the sort of thing you can get in a shelter down here...

What IS that critter? A Possum-Rat?
A quenda. A short tailed bandicoot. About rabbit size but actually a carnivore (although I think that includes largish insects and reptiles not other mammals).

Nope... Not hitting too close to home! Better luck next time. :)

I just have to wonder... How does one remove a "wing tip" from a shelter mouse? What was the mouse planning on doing with the wing tip in the first place?

I think this is the recipe we should consider. Maybe as an appetizer. Or, as a loss-of-appetizer for those getting ready to go hiking! :)

1. Small animals (such as rabbit or muskrat) may be processed in a manner similar to chicken.
2. Large animals (such as deer or bear) may be processed in a manner similar to beef.

We should post this in the kitchen... Don't want any guest chefs to make a mistake when they process large game!

No need to worry, have him inspect the deep end of the pool. There is a polar bear in it. Problem solved after you sell the inspectors truck on EBay! With the proceeds we can buy more Sea Salt and another SILWF which got clogged with BS and voided the warranty.
