    Default Mexi-Cali Beef and Bean Quinoa FBC method

    I love tex-mex flavors, and the quinoa gives this a nice chewy mouthfeel when rehydrated. Very filling and satisfying this past weekend in the cold!

    Basically dried taco meat, beans, quinoa, with spices, veggies, and cheese. The full write up is here. Mexi-Cali Beef and Bean Quinoa

    After reading this post, I followed your 5 step thread on DIY food for hikers. Love it! You are making exactly what I'd love to be eating out there. It might be more hassle to use mail drops for food on my planned AT thru, but if I can do it the way that you do it, the healthy food will be well worth it. If you ever decide to start a business providing healthy, tasty FBC trail food, put me first on your customer list!

    I really appreciate it! Eating a "special" diet definitely means more work, but the paybacks are big, IMHO. I have been playing with a business plan; if I go forward, you can be my first guinea pig, lol

    I have that book.

    Now Sarbar has more books for us. www.trailcooking.com

    Demeter's YouTube video on use of a dehydrator convinced me I could do it.

    Others in this forum have favorites for dehydrating meals, and, favorite recipes for dehydrating jerky I have seen in the forum.

    Thank you Connie - yep 3 trail cookbooks now And someday..(hahaha) I will have FBC 2 done. The recipes are done but I edit when the kids are asleep and neither of them will nap anymore. Le sigh! Good hiking partners though with all that energy ;-)

    Made this last weekend and had some for dinner last night. I got 4 good dehydrated cups out of it. I'm still not quite sure what quinoa is (or how to pronounce it) but it tasted alright. I've got some more dehydrating right now. Next time I'll probably use 1.5 lbs of meat.

    Quinoa is pronounced KEEN-wa. It's a high protein seed, not a grain.

    I also like to cook and dehydrate quinoa, then add powdered milk, brown sugar, raisins and walnuts. Good breakfast and you can add hot or cold water.

    You might have just given me another hot breakfast besides my oatmeal, raisins, peanuts, and dried pineapple with NIDO. I'll give it a try.
    This is the year to move away from pasta sides and mashed potatoes.

    Quinoa is super versatile, because it can be used to replace pasta, rice, or oatmeal in your recipes!!

    Here is a link to a quinoa pilaf recipe that I really like (good cold for lunch, but I like it best warm).

    I also have a video on quinoa preparation for the uninitiated!
