    Agree 100%. Unless it's all cheap ingredients like a Chinese buffet or Golden Corral you will go bankrupt. The only all you can eat's that work well are seafood buffets but the average price is close to $30 per person. The all you can eat that I like are Mongolian grills where you pick you ingredients and then they cook it. It makes the customer think about waiting on line for the second or third trip is worth the wait. Pizza, Pasta, Beer and Wine is almost always a winning combination. Inexpensive but decent wine will sell.

    big portion is nice but when a thru knows she can go to pizza plus, drop $7, and eat until basketball belly'ed for 3 hrs, the choice is no longer a choice

    Thru hikers maybe will account for maybe 2% of the business. If it was your place would they be your priority?
