In the past we've taken Jif peanut butter zingle serve things and jelly on pita for lunch but I dont want to mess with the jelly and bread. What could I dunk in my PB that is easy and not bulky? Even better, what do you eat for lunch on the trail?

Peanut butter and jelly on a bagel with a hunk of cheddar cheese. Every day for 5 months.
When day hiking, or first day out on a short trip, a sub sandwich without the wet stuff (lettuce, tomatoe) that will make the bread soggy.
I have eaten with a protein bar. It makes the bar taste better and combined it makes a high protein high calorie lunch.
tortillas, compact & lasts a while. Although I seldom eat it off the trail a small plastic tub it it is a staple on the trail. Hint, use back side of your spoon to spread it. If you want jelly try http://www.minimus.biz/. Other trail lunches: Summer sausage, hard cheeses, sardines, foil/cans of tuna, chicken, ham, etc, hummus, dried fruit...

Sometimes if the weather is bad in the morning, I eat my lunch for breakfast and then cook my breakfast (oatmeal/coffee) for lunch.
pop tarts dipped in peanut butter or butter or nutella or jams. for improved mega flavor bonus add bacon for maximum effectiveness. trust me it is amazing and is gaarrraauunteed to keep you energized for miles upon miles.
This. Haven't tried the sardines yet but everything else to a T. In the colder months, I add cheese sticks (mozzarella, cheddar) and cold cuts as well. Pita are bulky while tortilla are flat. Bagel thins work well also sandwich rounds. It depends on what else you have in your pack and how much softer items get squished.
Tip - dehydrating chick peas and beans for refried beans is easy. Then simply grind them in a blender (coffee grinder is better) and add spices to taste. Rehydration is quick and easy!

I've dipped ramen noodles (dry) in peanut butter and it taste pretty good. But I guess anything taste good when your hungry.

I have told to eat more fiber by my doc. I found my daily Kellogg's Fiber Plus granola bars dipped into one of those Jiff tubs was really a great lunch/snack while on the trail.
Peanut butter an pickle sandwiches.
Forgot to add that granola bars dipped in PB are very good.

I don't dip into PB. I squeeze it out of a tube or from 1 oz packets. It goes in and on whatever or simply squeezed directly into the hungry hiker abyss - the mouth. Don't limit yourself to PB either. There are LOTS of other nut butters and nut butter combinations available if you expand your creativity and knowledge.

I'm a big fan of PB and Snickers burritos (i.e., on a tortilla).
