Local store has green peppers on sale this week for 39 cents each. I'd like to buy at least $8 worth for drying. Is this a good deal, or should I just order a case (5 pound box) thru the restaurant I work at?

Ripe bell peppers have much higher nutritional value. I grow all I desire and freeze them.
Of course, it would also be possible to dry them. The thinner-walled, hot varieties dry more readily.
Just made a Not so stuffed bell pepper casserole which I dehydrated for the trail
Please remember the brave men and women of our armed services Without them we would not have the freedom to walk across this great nation.

Dry a bushel of them every summer - fits easily into a gallon Freezer bag. Whatever price is cheaper, go for it. word of caution. the ones on sale may be older and softer than what you can get thru your restaurant.

Well I went to work and the chef tells me that he was never told to order a flat of shrooms for me. So they will be in on Friday. As for the peppers, he said to get them at the store cuz 39 cents was a better deal. So I came home with 12 bags of frozen peas, corn and mixed veggies and 25 fresh green veggies. Looking forward to alot of drying over the next 2 weeks.
BTW, I have tried drying Pollack and it dries to a pliable texture. First batch, I threw some dried veggies, several pcs of pollack and other dried things into some ramen for a day hike w/lunch and it came out really well and tasty.
39 cents is cheap for here. Most times of the year we pay $1 to 1.50 per green pepper. Red can run $3. Sigh.
