Default Sleeping bag rating for my needs?

If I rarely backpack/camp below freezing, what is the minimum degree rating of bag I should get? I live in Northeast Georgia, an hour east of the AT and I would like to start doing more hiking/backpacking.

I purchased the Marmot Never Summer 0 degree bag and that thing is a sauna! I used it for 2 nights at Low Gap Shelter & at Blue Mnt Shelter and was too hot. Would the REI Polar Pod +25 be the way to go?

I use a 30-F bag most of the time. It's fine down into the 20s if I wear clothing inside the bag. In winter I use a 5-F rated bag.
