What is a reliable-but-not-super-expensive vacuum sealer?

I like this one. It is super cheap, readily available at Walmart, and the bags can be reused/resealed.

I own one but use it for vacuum sealing meat for in the deep freeze.
I find the plastic to be heavy and the edges too stiff for using for dehydrated foods for backpacking. Instead I use the higher quality ziplock bags and keep all my dehydrated foods in the freezer until it's packed for a trip.
To answer your question - mine's a 'Seal-A-Meal'.

Seal-A-Meal here. Been using it on venison, beef, and other freezer meats for years. Will use it for home-made b-packing foods very soon.
Experimenting soon...

You can get older versions of the Foodsaver really cheap on Ebay. (and still brand new to boot) I got my first one for $35 and used it for 3 years. I eventually shelled out the bucks for a new one. Love them both.

I just bought a ZIPLOC hand pump that works the same as the FOOD SAVER listed above, but the ZIPLOC does not have a battery or motor so is lighter and likely more durable. It works very well for me so far. It costs less than $5 and the replacement bags are cheaper than FOOD SAVER'S I believe.

I have a cheap food saver. Does the job, but if you like to store food in your pantry you may want to get one with a jar vacuum attachment.
