Even the sausage or salami that is sold in the refrigerated section and says refrigerate after opening? I see good salami for sale that is in the refrigerated section.

I'm convinced that the "refrigerate after opening" labeling is to reduce liability. Follow the USDA recommendations and enjoy!

It depends on the temperature, winter I'd carry it for a week, warm weather, three days max. I did carry a stick after opening it last October for longer in warm weather, had to take a day off in Front Royal, was okay after flushing it out with a few cheeseburgers.

I'm fairly sure that's why it's called summer sausage. It was designed to be stable in summer, before refrigeration was available. Country ham is the same way. They hang them in a dusty barn in a burlap sack which gets covered with mold. But the ham inside is amazing.

I love summer sausage and ham. But l would not trust anything other than jerky to last over .. 2-3 days.

doing some trailside refrigeration would not hurt. Put it in a zip lock, suck the air out, then put it in a gal zip lock of spring water.
Might help ??

I've used summer sausage and it lasts and lasts in any weather. usually 8 ounce size sometimes 10 and stretch it over a few days. If unopened I would not worry about it In f act has anyone ever had it go bad? In old time deli places it would hang from the ceiling until sold.
