what to bring when first starting out on the trail?
Go to the WhiteBlaze home page. On the left side above center is a list of links. One of those links will lead you to a day by day resupply schedule. Print it out. Mark a map. Enjoy.

What you eat is very personal, and likely to change as you go. If it doesn't have a lot of water, and has plenty of Calories, it should do. I've been backpacking for fifty years, and plan to thru in a couple more. I still don't know what I'll bring.

In my case, the only constant seems to be coffee. If I can't have real coffee I'm not going. :)
