Will be taking a week vacation there, can anyone familiar with the area suggest some good day hiking trails that are both kid friendly (7 and 4 year olds) and non kid friendly?

It's a beautiful area.
My family loves Rickett's Glen State Park.
Lots of waterfalls, but not much hiking.

Then there's the Lehigh Gorge which makes for a great bicycle trip (you can start at the top and go downhill to Jim Thorpe)
Many kayak this river too but again, not the best for hiking (you'd get run over by a bicycle probably)

For me, I go to the AT which is not far away in Wind Gap or Del. Water gap.

Good luck.
There should be more hiking trails in this beautiful area.
Lots of ski resorts, honeymoon venues, boating, hunting, etc.

Lots of trails and parks in and around the Pocono Lake area, Hickory Run being fairly close and having a mix of trails, perhaps the kid-friendly you are looking for (short drive time, easy trails, etc). For adult enjoyment I would probably head to the Delaware Water Gap along the AT. Mt Tammany can be challenging though low mileage for the loop, and there are any number of AT sections along the Gap that could be of interest.

Hickory Run is a very kid-friendly place. Easy hiking trails, swimming in the lake, there's even a snack bar. You definitely have to see the boulder field which is a National Natural Landmark. It can get quite crowded though, particularly on weekends. http://www.dcnr.state.pa.us/stateparks/findapark/hickoryrun/index.htm#hiking

Not far beyond is Nescopeck State Park with IMO equally nice kid-friendly hiking trails and far fewer people. No swimming though.

If you make it down to Jim Thorpe consider the infamous Glen Onoko Falls trail. Definitely not kid-friendly. It's not long but is quite challenging and has some spectacular (for Pennsylvania) waterfalls.
