When I was in Lost Maples State Park (Vanderpool TX) a few years ago, I met some folks from Houston who said that was the only place they knew of that had trails worth hiking and decent camping. It's a drive, but you may find that to be a good option.

You might consider driving out to the Big Thicket. We used to hike out there. Not a bad drive from Houston. http://www.nps.gov/bith/planyourvisit/things2do.htm
