I just finished dehydrating a 5 lb chub of 73 % lean hamburger. Meat was browned, blanched in a lollander with hottest tap water and dehydrated in my oven at 170 degrees (the lowest setting). Process took 8 or ten hours.

The finished product weighs 1 lb. (16 oz.)

I have found that about 1/4 cup of 'gravel' mixed in a meal of pasta or ramen or most anything makes a good sized serving.

Good guideline. When I'm going to dehydrate hamburger, I like to use 90% lean so I can make sure I remove as much fat as possible after cooking.

In spite of what is out there - fat delivers more energy and if you are making a fresh batch, dont worry about it. I use 80/20. stuff that hits the bottom ends up in the pan for potato Hash Browns----Winning.

Packit Gourmet claims 2oz of their freeze dried ground beef is equivalent to 4oz fresh. Seems like quite a disparity. Im not sure of the differences between dehydrating and freeze drying but I though they would be close.

The Mary Bell dehydrator cookbook states 1 lb lean ground beef will yield 4 oz dried. This is close to the OPs findings.
