Somewhere in the past I read that you could take water only muffin mix and make them on the trail.
How would you do this as I have read on the package to make in the oven?

You steam bake them. Put the mix in either a silly-cone muffin cup or a metal cup. Put a couple of stones in the bottom of a bigger pot, and add some water. Place muffin cup on top of rocks (don't let it touch the bottom of the bigger pot) add lid and cook. I find that if the flame goes for about 10 min and I don't touch it for a total of 20 min they are about perfect. Play around with the amount of mix and times for your setup. Top won't brown but muffin will be done.

There are some methods of making them in ziplock bag but. There was a rig called a bakepacker but I seen folks do it with stones. The key is to keep the bag above the water level exposed to steam using rocks

Or, if you carry a small frying pan, you can mix them up and cook them like pancakes - don't forget to bring oil or margarine. I do this often with cornbread mix. The mix calls for egg and milk, but I just add water and it comes out fine. I think I tried a blueberry muffin mix this way once, maybe twice. It turned out alright. The cornbread is a welcome treat, and a change from the usual trail food.

Take and set some time aside to get on YouTube and do searches for "steam baking" "dry baking" and baking with alcohol stoves. You'll find many instructional videos about each of the techniques.

Also look up both batchstoves.com and minibulldesign.com, as they both offer gear for baking along with instructional videos.

I'd swear that I posted this reply yesterday, but I don't see it on the thread. Some time ago, I put up a photo set on Flickr (https://www.flickr.com/photos/ke9tv/14021458763/in/album-72157644331682423/) showing the technique.

There's nothing for starting a lazy day of hiking (I don't do big miles) with a freshly baked muffin and a nice hot cup of coffee, particularly in nasty weather. One of my hiking partners, upon being greeted with this in the morning, said, "I could get used to this!"

Try a Dr. Oetker's caramel mug cake with a handful of gorp thrown in the batter.
