Based on historical weather in Great Smoky Mountains National Park, you should be able to start as early as April 1st at Springer Mtn and miss the snow.
Of course blizzards have occurred in early April. But I quickly glanced at the last 10 years of historical data at one of the GSMNP web cams (http://www.nature.nps.gov/air/WebCams/parks/grsmpkcam/grsmpk_arc.cfm). April 6-8 of 2007 was the last time the GSMNP had snow on the ground in April.
