Can you make a decent cheddar from skim milk? and if not, Can it still be done half decently with say 1%?

I heard you can dehydrate cheese even more, then food process it into a powder.. probably no more inexpensive than Walmart, but maybe gratifying.

I'd guess that there is a cheese making website and or group that would be a better place to ask. It's a complex art, or so I hear.

I dry a lot of things, but cheese isn't one of them. For cheese powder I use Barry Farms cheddar powder and for freeze dried shredded cheese I've purchased from Emergency Essentials. When it comes to dairy professionally produced just makes more sense to me in terms of quality and safety.

That being said, I also carry aged cheddar in the form of individually wrapped sticks because while the powdered and dried are nutritious and tasty in a meal, nothing releases happy brain chemicals like a warm, soft stick of cheese pulled out of the pack to celebrate a summit :)
