... you mix it with sour kraut and dehydrate it. That way you can have tortilla Ruben sandwiches on the trail (just add cheese and Russian dressing packet) while others are having their mac and cheese or instant potatoes and bacon bits. :banana

Yeah, I'm lucky if I have enough leftovers for a single serving of hash the next morning.

I will dedicate an entire corned beef to the dehydrator however, great idea!

Best Reuben I ever had was at the "New York Deli" on Broadway if I recall, that thing had to be 3" high...love me some Reuben's.

I always carry a small screw-top plastic container from a dollar store; it'll hold any manner of food that is "extra". You either eat it in the middle of the night, or for breakfast, or at some time the next day. One way or another, you're gonna eat it long before it goes bad, mankind lived for a zillion years without refrigeration. The answer to "What does one do with leftovers?" is simple.......save 'em, seal 'em, and eat 'em later.

Whoops. I just saw the "St.Patrick's Day" part of your post, so I'll change my answer, especially if you're not hiking. Re. the corned beef: Eat it today, give it to the cat, or chuck it. Stuff that looks like gold after three days on the Trail doesn't always have that same appeal when you're at home.
