A friend of mine purchased a Chamber Vacuum Sealer

I'm interested in the fact that the machine won't suck out liquids.

I'm interested in vacuum sealing "pickled eggs" any one out there have any experience with this type of sealer and pickled eggs?

I would think vacuum sealing them while hot, in plastic, would make them trail worthy. Waddaya think?

Zelph the cheap ones have ribbed plastic that suck air and leaves liquids.

Nice! I want one. I actually pressure can foods at home. The jars actually made a 1900 mile move without any breaking. I had 2 or 3 seals let go but nothing leaked out. When moving I put rings on my jars in case lids unseal. But I wanted to make my own "MRE's" so I looked at buying one of these and buying the retort packages. There are a number of reasons for me making my own MRE's which I won't get into but none of them involve backpacking. You need a chamber vacuum to seal the food in the retort pouch and then you pressure "can" the packages. Now the food is shelf stable in an "unbreakable" container.

As for your pickled egg question - no idea. Like I said, I believe you need to "pressure can" the pouches after sealing to make them shelf stable.

The MRE idea is what I want with the pickled eggs(I love eggs)

My thought is the pickled egg has enough vinegar to produce the acidity needed to prevent botulism, so no need for refrigeration. The food industry packs individual pickles for snack type use, why not pickled eggs the same way.

The issue with eggs is that they are such a great growing medium for all kinds of things once the shell has been opened. I don't know if the vinegar would be enough to make them safe & shelf-stable - although I have seen a gallon jar of eggs sitting on a bar counter.
