My new favorite dehydrated salad. I made it very plain with coconut aminos, fish sauce, cayenne powder, 2 teas.maple syrup and 6 shredded green (green as in not ripe) mangos. :banana
Yummy Re-hydrates with cold water. Could add some nuts or those tiny dried shrimp. Yummy 2 :banana:banana



I think these are my first dancing bananas!

My wife is Thai and makes the BEST green mango salad. (or Yam Mamwung)
She's experimented and made a few changes from some of the good Thai restaurants here where we live on the island of Phuket.
She adds chopped pork (or sometimes small shrimps like you said), and uses star fruit (when in season) instead of the sugar (or your maple syrup)
One trick in the USA is to get the green mango.
If it is starting to ripen (as they usually sell it), then she will taste it and adjust the amount of sugar or star fruit (or other fruit's she's tried, like kiwi) to make it tangy yet sweet.
I think she puts a little lime juice in there too.
One of my favorite Thai dishes.

Star fruit sounds good, does she grate it or make matchsticks? I would like lime juice too.I'm in Florida so mangos are all over right now. I did see some really green ones at an Aldi's. This will just be so refreshing when hiking when it's hot out.

Great ideas! Creativity, ahh so refreshingly fun and unboring.

I'd try adding small dices of dried crystallized ginger.
