I'm heading out to the Colorado Trail soon and I know cooking pasta at elevation takes forever, so my go-to Knorr Sides meals won't be the best choice. Looking around I found Egg Noodles cook in 3-4 minutes, so the question now is what to use for a sauce?
I'm currently trying to dry spaghetti sauce in the oven and that might work. I might just dump the pasta out of the Knorr sides and use their cheese sauce. Or maybe I'll just get a stick or two of margarine and some grated cheese.
Any other ideas?
My pack base weight is already 18+ pounds and I need to carry 6-7 days of food right off, so trying to keep that weight down and not starve too badly...

I haven't tried it, but I hear that spicy peanut sauces (think: Thai food) are a good variation from using spaghetti sauce.

Knorr Parma Rosa sauce is good on pasta.
Also, margarine is fake food. I would take real butter.

Rice noodles and couscous cooking instructions exactly match FBC method.
Bring water to a boil. Add noodles or couscous. Remove from heat. Cover and let stand 5 minutes. Sound familiar?

I like egg noodles, but I find they aren't the best thing to pack. It's a little like trying to pack potato chips. They take a lot of room for their weight and calorie content. If you're starting with a week's worth of food, that may be a concern.
Minute rice has lower calorie density than uncooked rice.
Angel hair pasta cooks quicker, of course.
It's hard to beat nuts and nut butters for calorie density and being ready to eat.
Instant mashed potatoes don't require any cooking, like couscous. Or rolled oats.
I'm not sure why I always forget about couscous..love it..does anyone sell individual packets or just a box you split up. I haven't had it in years.

I have only seen the multi-serving boxes in regular supermarkets.
World Market sells a larger sturdy plastic resealable (Ziplock style) bag of couscous. Much easier to subdivide and store the leftover couscous until the next trip. Or, great for a group.
World Market also has single serving, shelf stable summer sausage.

I like Iserali couscous. Not really couscous, it is actually small pasta balls.
Cooks fast, packs small.
Just put the Knorr sides in your pot into a cozy after bringing to a boil and give them 15 minutes or more in the cozy to fully hydrate and soften up. I've done this plenty at 10-11K elevation with no problem.
