Here's what I have found so far with just a few minutes o searching.

Big Agnes adjustable poles

Gossamer Gear

Exped and Snow Peak make a set as well.

I'm looking for something light to use in place of trekking poles on a trekking pole tent. So something around 45-50 inches in length, adjustable would be nice. Something that on occasion can go to 6 or 7ft for use as a larger tarp pole instead of just being relegated to trekking pole replacement for tents.

Zpacks make carbon poles for use with their tents, tarps, etc. They are not adjustable, but there are different sizes to choose from.

I think Judy @ Lightheart Gear sells some poles to use with her tents. They may be adjustable.
TarpTent sells similar poles for their tents.

I have searched for different type of materials and the one idea I keep thinking a lot of was using a carbon framing for building kites. They sell endcaps and connectors as well.

Check out Kite Making Companies. Here is an example website http://www.funwithwind.com/store/ListCategoriesAndProducts2.asp?idCategory=181&idparent=168

UL tent poles are only better than UL trekking poles because they are lighter. They are lighter because they don't adjust. If you want lightweight and adjustable, just go with trekking poles. My Rita Locura carbon fiber adjustable trekking poles only weigh 4 oz each.
