I am wanting to know how many permits will be needed on the AT. Also, what is required to get a permit in each place? Types of ID and things like that.

You'll need to get permits (and properly fill them out) before entering both Great Smoky Mountains and Shenandoah National Parks. There will be signs at both places with instructions on how to get your permit, and how to fill them out.

Make sure you have these permits on you at all times or you can be fined and removed from these Parks.

You'll also need to register and obtain a permit when you enter Baxter State Park.

The National Parks are free; for those overnighting at Baxter, a nominal fee will be collected.

The National Park permits you fill out yourself, don't worry about ID.

They might ask for photo ID at Baxter, but then again you'll want to carry some sort of official ID anyway during your trip, as you may well be asked for it on other occasions: Motel registrations, collecting mail at Post Offices, etc.
In some cases, stores might want to see ID when you cash Traveller's checks or use a credit card.

Is there a need to get any sort of permit early? It sounds like you can obtain one as you arrive at the place the requires the permit.

No need. You can get them as you enter the park(s)
