Sarbar’s recent post about low sodium cooking inspired me to try a low sodium approach to spicing up some of the freezer bag recipes. Omitting the salt in the following recipe seems to work out just fine and is great with the mini tortellini from Trader Joe’s.

Emeril’s “Essence” Creole Seasoning (also referred to as Bayou Blast):

2 ˝ tablespoons paprika
2 tablespoons salt (omit)
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

I tried some this mixture, sans salt, and I thought it was wonderful.
