You Easterners should be able to give me some good ways to prepare this as a trail snack. A local store here in the midwest says it's a seasonal item, fall winter type of thing. I'll be looking for it locally today in other stores. Comes in a can, ready to eat. What is shelf life once opened and kept in ziplocs? Can it be sliced and fried with olive/coconut oil?

Shelf life is slightly less than other types of bread due to the extra sugar (molasses). You can fry it with oil, but butter works much better. Just put a stick in one of these tubes:

I was raised on Friday night baked beans and brown bread. (Dad was from Mass.) Haven't had the bread in years, but it was pretty dense, so should pack well.

I would try slicing into 1/2" rounds, then cutting rounds in 6 like a pizza. Next dehydrate in slow (150 degree) oven or a dehydrator if you have it until crisp. Store in glass jar (old spaghetti sauce jars work well) until hike, when you switch to a ziplock. Dip in honey butter and snack on. Honey butter- 2-3 parts butter to 1 part honey to your taste of course, cinnamon is a good add on and is anti inflammatory.

Cant wait to find this item and try above myself. I love to eat!

I cut it into 1/2" thick rounds. 1st one I ate covered thick with butter

2nd one I ate with peanut butter by taking small bites with different amounts of peanut butter per bite. Had to do that because the 1st bite had too much peanut butter and could not taste the bread.

3rd slice I had with honey.

Of the 3, I preferred the one with peanut butter. It will only get better with a "crunch" brand of peanut butter.

All were good. Will have it more often. Will try frying it and toasting also.

My wife tried it with peanut butter, liked it but said it had a too heavy taste of molasses. Would only have it once a year:rolleyes:

Take contents out at home, place in ziploc. No can to pack out. Add extra raisins and add peanut butter...what's not to like :-)

This morning I simmered 2 pieces in salted sweet cream butter. Simmered both sides till I thought was well enough ;-)Put dollops of black cherry Activia yogurt on top of them along with a couple walnut halves. 90% of the molasses taste had vanished. Twas a delightsome breakfast.

Been a long time since I had that bread. I remember it as dense, but tasty. No idea what the shelf life would be though.

Yesterday and today I had it toasted with butter. Gets better everyday :-) It is dense, but tastes great as the testing goes on. Stays moist uncovered in fridge. Will get some cream cheese for it today. One end of the loaf is not flat and that end is a little less moist.

Grew up on the stuff. Sliced out of the can no need to fry just slather on a nice amount of good butter eat wash down with coffee. Had it somewhat recently stuff isn't anywhere as good as it used to be.

I grew up in Chicago, ate nails and glass for breakfast, washed it down with moonshine. ;-)

I'm new to this bread, give me time and Ibe eating it on a regular basis. Gonna put a slice in a ziploc and let it sit on the kitchen table till it starts to grow little green and grey thingies :-)

I was inspired by this thread to buy a can yesterday at my local grocery store for old times' sake. This led to an amusing conversation with the two high school kids working the register; they were stunned that such a thing exists. I explained about food storage in the dark ages before refrigeration or market shelves stocked by daily deliveries. They decided that this may be the greatest thing since...., well, since sliced bread.

The plant they make it in is in Portland Maine. When I was growing up in the late sixties to seventies they would always donate cans of beans and occasionally brown bread to local groups like the boy scouts. We hauled a pile of B&M baked beans down to the national scout jamboree in 1977 but sadly didn't get any brown bread. Its an acquired taste and texture.

Their claim to fame is they are true brick oven baked beans compared to "steam beams" which are cooked in the can with no precooking. They precook the beans in kettles and then can them and apply a sterilizing bath while other companies just put the raw beans and ingredients in and cook them in the can. I used to get kick out of their marketing, every can of beans had a piece of salt pork added to it, they also sold "vegetarian" beans without the added salt pork.

Get a nice day with the right breeze and a walk along the eastern promenade walking trail just across from the factory in Portland and it will smell like a combination of ocean and baked beans, very reminiscent of a lobster bake. Makes me salivate thinking about it ;)

Based on your age, if the breeze was in the other direction from South Portland the odor from the rendering plant in South Portland or the odor from back bay ruined the effect.;)

Now that they cleaned up the area and in the process of driving what is left of the marine industry out, the B&M odor is a bit more noticeable without the other background odors. I expect developers are drooling over getting their hands on the B&M building as its prime waterfront real estate.

I've read that it lasts a couple of years in the can (best by date), and about 4 days once opened.

Brown bread (sent to myself in maildrops) and cream cheese were staples on my thru-hike in '87. By New England, I couldn't stomach dry foods like packaged cheese and crackers, and the moistness of the brown bread combined with cream cheese was heavenly. I had sort of forgotten about it, because I don't see it in my local grocery stores any more.

Oh don't get me wrong, I like them as well. I do know a lot of people regift them at the next Christmas. Who knows, maybe they are like Twinkies and can survive a nuclear blast.

Ok.... I'm from the Midwest, and never heard of the stuff before. Curiously this topic came up as I just saw the B&M Brown Bread can at a large local grocery store and I thought...what is that! I didn't look too close at it and assumed it was like a canned fruit cake or similar. Thanks to this topic, nowI gotta go back and get a can to try.

I grew up eating them. I lived in Wisconsin, but of course, this was a couple years ago :) . We used to eat them with cream cheese, cuts the sweet a bit. All sugar isn't equal in the body and if it is still black strap molasses, that is high in B vitamins. I imagine it would be good hiking fuel. And for the record, I hate fruitcake and liked those, at least back then.

Try Backpackinglight.com, I found a lengthy discussion there. Or just search Google. There are more Logan Bread recipes than you could stir with a Kitchen Aid mixer.
The origin of Logan Bread is quite interesting. No spoiler alert from me.

Well and then there is homemade Boston Brown Bread, which seems to be designed to be made in a coffee can. I gather it's kind of similar though. Not sure if you can legally make it outside Boston ;) . And yes, Logan bread does have an interesting origin! Btw, there is a reference in recipes for Brown Bread of Johnny cake flour. I have read (not sure where) that Johnny cake was a mispronunciation of "journey cake".

Good idea. slice it, put 2 tablespoons of peanut butter on one slice and make a sandwich. When ready to eat, warm sandwich on one egg wonder pan and dribble some honey on it after each bite.....sounds good to me :-)

I was raised on Friday night baked beans and brown bread. (Dad was from Mass.) Haven't had the bread in years, but it was pretty dense, so should pack well.
So was I (raised on it) and so was my dad (from Fall River). Every Friday night it was burgers, B&M baked beans, and brown bread (cold with thick chunks of butter "spread" on.
I can't imagine it would travel long or well without the can....too moist and fragile....but what a treat it would be.



I've read that it lasts a couple of years in the can (best by date), and about 4 days once opened.

It's good to see people putting some value into bread. My journey this year is going to be bread centered, and I am amazed at the comments that I've heard. In our society, people are too negative. It's easy to think of ways that it might not work. It takes a more analytical mind to envision methods of success. I've been told that bread is just empty calories. With how often people are going stoveless, I guess everybody has their priorities and opinions. Enjoying food is a priority to me =)

Not sure if you can legally make it outside Boston ;) . And yes, Logan bread does have an interesting origin! Btw, there is a reference in recipes for Brown Bread of Johnny cake flour. I have read (not sure where) that Johnny cake was a mispronunciation of "journey cake".

My grandmother made it in Iowa, and she didn’t go to jail, so I think it is legal to make it outside of Boston. I had a can of brown bread on my first backpacking trip. We were headed to Mount Le Conte in the Smokys. Sitting on the edge of the trail, we opened the can and then slathered on some butter. Maybe that’s why I like backpacking. ??? A backpacking group I used to hike with would bring fruitcake on hikes, and make a little hot buttered rum to put on the pieces of fruitcake. Geeze I miss that group.

I am afraid the writing is on the wall for the B&M factory, its a old antiquated factory sitting on probably the most valuable piece of real estate left in Portland Maine. its on a point with a big bay on one side and the Portland inner harbor on the other. One of these days the owners will decide the check for the real estate is worth more than the sales of beans. It will be sad day as when they blow the pots and the wind is right the area smells of warm baked beans.

Dont worry,as long as the brand or the products they make are still of value,those labels,processes, and equipment can easily be sold to other companies in the same industry and manufactured elsewhere.It happens all the time as the processed foods industry has undergone massive consolidation in the last few decades.

BTW,I did order some of the raisin bread as I have never seen it locally and it is the closest thing I could find to what we used to have down here which was Dromedary Date Nut Roll which disappeared about 20 years ago because demand did not sustain it's existence.

The logical approach is sell the trademark to one of the many "steam bean" companies. Most of the competitors put the raw beans and ingredients in the cans and then steam them to cook the product then label them. B&M bakes them in bean pots and then when cooked switches over to modern gear to package them.

Baked Bean Hole Beans are a Maine tradition, there are quite a few rural summer events in Maine that feature bean pot beans made by burying a big cast iron pot full of beans and fixings over night in a pit that was lined with rocks and heated up with firewood. Serve them up the next day with the local red dyed natural casing hot dogs, Jordan Snappers, and some Humpty Dumpty Potato Chips and "that's some darn fine eating" (to be said with a pronounced Maine accent). Sadly Humpty Dumpty potato chips did shut down and sell their trademarks to a Canadian firm and the biggest local red hot dog maker, Jordan, in the region also went out of business 20 years ago and sold their trademark. Like B&M their factory in Portland was worth as much as the business. Some trivia is the Percival Baxter who bought and protected Baxter State Park was the son of a major competitor to B&M in Portland and that is where his fortune came from.

The only antiquated equipment I saw in the video was the "batch process" for the beans.I'm surprised they are not cooked in a jacketed tank and then pumped to a filler to eliminate that labor intensive part of the process-OH,I know-"But we've always done it that way!" My order finally arrived.I'd recommend the B&M brown bread with raisins to anybody.However,I was glad to have a side cutter can opener which greatly facilitated pushing the bread out of the can in a solid loaf.It fit in a quart size ziplock bag.I plan to take it pre-sliced and have some Philadelphia cream cheese with it for a breakfast treat.

I dont think there is an expiration date on unopened cans and it does not need refrigeration. My guess is the flavor may go off but it is not unsafe. My guess is years maybe decades as long as the cans are kept dry so they dont rust on the outside. As for opened, the beans will go bad in 4 or 5 days when kept in a fridge as its an ideal growth media. I would expect the same with the brown bread. We ate the brown bread when I was a kid as my dad liked it. I think he toasted it and on occasion would fry it. That is a long time ago and it sure wasnt health food but he made it to 97 so it wasnt that bad for him.

BTW Walmart will deliver cases for free to pick up at the local store. I think it was the least cost option.

My cans have a best used by date of Nov. 2022.This does not really mean anything other than taste etc as the general consensus in the canned foods industry is that the product is a good as the container its in.So long as the container is not compromised and retains its hermetic seal,the product inside should be considered safe for use.Palatability is another question altogether.

I heard once that a Civil War era ship had been raised and that some of the canned food on board was still preserved;not recommending anyone eat something out of date though.So far as the bread is concerned after opening I would expect it to get dried out and stale before getting moldy if kept in a refrigerator because the water content of the bread is low and the texture is reasonably dense compared to sandwich bread.

It's my intention to keep mine in a freezer bag a few days just to see how it keeps and will post my findings
soon.

I have not successfully tested the shelf life of opened unrefrigerated B&M Brown bread because I can't stop eating it.
That stuff is addictive.Two pats of butter on about a 3 oz slice of it and warmed a half minute in the microwave makes it my drug of choice.It's going with me on a little overnighter to the Foothills Trail somewhere after Christmas,weather and other conditions permitting........

If one were to dehydrate it,would it get tough?Would you rehydrate it with water? I did read where they said something about toasting it on the label which I guess would make it a little bit lighter if that's the objective.Personally I like the cake like quality the way it comes out of the can.

It was just curiosity - I've got a good dehydrator that I rarely use. If this were easy to dump on a tray and get something useful out of, I might give it a shot. I figured somebody might have gone down that road before to report what they found.

My guess is that it would be crispy, like a crouton, if dehydrated, and turn into a soggy mess if you tried to rehydrate.

So,Zelph,are you saying you think it would get flakey and chunky like granola? I've never had a dehydrator but I would think one could dehydrate to the point you want it and then stop-right? Looks like you could then dry it down to like a crispy piece of sweet melba toast.I'd try it if I had a dehydrator(would try it in the oven but might make a mess and I don't want to get in trouble with the Management.:D)

It has a lot of sticky molasses in it. It is steam baked in the can so that stickyness is going to remain to an extent. I don't have a dehydrator. I'm just going to let some dry out laying on a piece of paper towel. I'll turn the pieces over every few hours during the day as I walk by them :-)
I don't think they will get crispy, I think somewhat like a granola bar chewyness. The raisins in it will add to the chewy texture as they dry a little. I say yes to dehydrating to the point that fits your liking.

I'm thinking I will cut mine in about 5/8ths thick slabs in a ziplock bag.Don't know if I can spread pnut butter or cream cheese on it in the field without having a plate to work off of without making a mess.Note:I have been thru almost 2 cans of this stuff in a week.....

I saw one or two people over the years that used a frisbee. One guy shared it with his dog. He would eat and then he would feed the dog in it and rinse it out for the next meal.

Got 2 new Swiss Victorinox knives for the B&M. They are extremely sharp. I use the top of the can as a cutting guide for same thickness cuts.

Good One,Zelph.I like the way you think outside the box.However,I am avoiding my stash of the canned candy bread goodness because there's ingredients in there that react with all my clothes that makes them shrink for some reason.So it will stay on the shelf until warmer weather arrives and my activities pick up a little.....

Snow? We had snow here in February of 1973.Nobody moved for just over 2 days until it all melted!I've never seen a snow shovel btw.

I checked it several hours after putting it in the freezer and its can be eaten right out of the freezer. Its always a hassle trying to find calorie rich winter time hiking food and this seems to be a nice option.

Saw it in the Hannaford down here outside Albany (NY) today, so they seem to have spread it through the chain. Right near the baked beans in our store (which of course B&M also make), as a clue if anyone is looking for it.

Breakfast both mornings was sliced brown bread, fried crispy in butter, then coated liberally with cream cheese. I usually eat this stuff prepared like this on our annual January camping trip odd years. On even year trips we do the same thing to holiday fruitcake. :-)

I had a slice this evening and it was a doubled treat because I added some cut up(3) Natural Medjool Dates. The dates are no doubt the most delicious I've ever tasted. Life just got better! :)

I have pretty good luck buying Medjool dates on Amazon in 5 lb bags. They keep a long time in the freezer. I think the last batch were "Anne and Sarahs" Theey are almost a different food compared to the cheap dried out dates sold at some retail stores.Sometimes, they will get white powder on them which is crystalized sugar coming out of the date. They are not a diet food ;(

I got some off Amazon about 10 days ago and they say "product of USA".They are listed as 41 calories each.I had 4 with a slice of cheese for lunch today.They are awesome despite having pitts so next time I will be looking for pitted.

A long time ago National Biscuit Company sourced dates from Iraq and Iran and sold them under the Dromedary brand but that was long before Desert Storm,Saddam Hussein,Osama, etc.The local grocers would be packed with them from Thanksgiving to Christmas but I have not seen them in at least 30 years.I don't miss their dates but the date nut roll they made in a can still makes my mouth water.B&M bread is about as close as I can get to it now.

The brick stack had a lot of reinforcing bands on it, usually an indication that it was on its last legs. New codes requires seismic bracing and some insurance companies would charge a premium for an old stack like that due to potential to do damage if it did come down.

Never heard of this. Been in New England for the past 20 years so I thought I'd give it try. It wasn't at my Market Basket but Shaws had it. It has a strong molasses flavor similar to gingerbread. The variety I found was without raisons.

Not good with red pepper hummus but reasonable with peanut butter and cream cheese. Excellent with Nutella. However all of those spreads are so much better on a finger. Don't eat the finger.

If you are Moxie soda lover, this should be the perfect companion.

In Salem MA, both the Market Basket and Shaw's (3.79-3.99) have restocked since early January. A Shaw's manager says they carry it year round. One MA Walmart Supercenter has it available for pickup at 2.32/can.

Google Boston Brown Bread for several recipes. If you use a 14 oz can with powdered molasses and powdered buttermilk, then in 35 minutes you can make in on the trail with the boiling water method. Maybe even make :banana brown bread.

I checked at the local Shop and Save in North Conway NH. They only had the plain B&M Brown Bread at $2.53 a can. There is major regional competitor, called Market Basket opening nearby soon and expect they will have both varieties for less. So you just need to figure out how to get free shipping.
