What is the average date each year that Mt. Katahdin opens up to hikers? Around the end of May, first week in June????

Yes, thats the average.
The following link is to a post that lists when the Hunt Trail to the top of Katahdin was opened each of the last ten years (it's got lots of other valuable info in it as well):

To sum up, from 2007 to 2016 the trail opened as early as May 20 and as late as May 31.
