Does anyone actually carry and use the JetBoil CrunchIt isobutane canister recycling tool on the AT?
If not, what's the usual practice for disposing a depleted canister?

No, most do not. Hitting it with a rock to puncture them, using a keychain can opener, dropping them off at hostels that accept them for recycling - many do, and hiker box the canister while it still has many days of fuel seems to be the way most will do this. And yes some do get thrown in the trash.
If you won't use the canister till it's done, but replace it early, just hiker box it.

I have a friend who refills his with butane.I suppose he trashes the empty butane vessels though.

My multitool has a tool that I can use as a punch. I use it to stab the empty iso cans enough to make it obvious that they are empty. Then I throw them in the recycling.

A regular old "church key" can opener works on the bottom. Just hook up canister to stove first and open valve to make sure the canister is completely empty/depressurized. Puncturing one with some fuel still in it could be unpleasant or worse.
