Carvers Gap to Watauga Lake is always a fun one. Lots of different terrain, plenty of water and shelters, road crossings if you need to bail.

Iron Mountain Trail loop. Start at TN 91 and hike north to Damascus on the AT and then hook up with the Iron Mountain Trail (the old AT) and loop back south to shady valley. Its about 45 miles.

You could get a couple of those Yellow National geographic maps that show trails and put together a great loop trail in the Cherokee National Forest or GSMNP.
