In addition to Neo's very interesting link, I'd like to suggest that anyone interested in obtaining bulk natural or trail foods consider joining a buying club. Here on the East Coast, United/Northeast is an excellent source for all kinds of trail goodies, as well as natural/organic type foods (you know, the kinds that cost an arm, leg and a toe at your local health food store!).
The way a buying club works is that you go to United's website, www.unfi.com (http://www.unfi.com), and click on the "find a club near me" html. You'd contact your club's administrator privately to see if they're accepting new members and the club's specific policies regarding orders, delivery dates, etc. There are literally hundreds of these clubs (four in my town of 20,000 alone) so hopefully there will be one near you. Once you've joined (there shouldn't be a fee), you just submit your order once a month or however often you order, pay, and then show up to help unload the truck and take your stuff. It's a great way to get some super deals on trail and other foods, as well as bypass the usual supermarket racket. Once you've gone through the cycle once, you'll have it down pat.
Some people are fortunate enough to live near a "real" store-type food co-op, but for those of us who are no longer so lucky (I miss the Park Slope Food Co-op every day!), a buying club can be a great alternative.

I found them to be somewhat pricy. I found better prices at:

I am ordering some powdered applesauce. Anyone tried it? I can't find it in small quantities at the local natural food store. I have to do the bear barrel poker this summer, my second experience with a bear canister. I am looking for packable, squeezable, reducible, crammable food items. Powdered applesauce seems to be a great dessert possibility.

I am lucky though and live near a WinCo store (huge bulk section), and Fred Meyer's (good bulk section of natural foods) and a number of Co-op's that have massive bulk sections.
I usually buy online for only the hard to find items.
I also have a number of spice stores down at Pike Place in Seattle I can go to, for dried veggies. http://www.worldspice.com/
The PNW is good for a few things...and one is how many sources we have for food out here :D
Neo, have you checked out Wild Oats in Green Hills or Cool Springs. They have a nice selection of bulk foods. Also Fresh Market in Brentwood has some. Not as nice IMO as Wild Oats though
