Sounds like the BMT would be perfect for you.

If you are car camping and want to be able to do some day hikes or overnights, head on up to Standing Indian Campground, west of Franklin, NC on Hwy64. You can setup a base camp there and there are tons of trails to hike, waterfalls to find, etc. Good place for the kids as well.

Cohutta Wilderness, an assortment of different trails totaling around 100 miles. I've hiked here, its Top Notch. Or if wanting to do one trail, with long shuttle the BMT, as recommended per Sgt Rock. I've hiked this trail but have heard its also Top Notch, I think it starts at Springer and ends at or near I-40 after GSMNP.

The BMT is a good one. I did approx. 50 miles of it in May; Section 1 through 5 (Springer Mtn. to Shallowford Bridge). The Hiker Hostel in Dahlonega is a good place to leave the car, get shuttled to Springer and call them when you're ready to get off the trail for a pick up. If you want to know more, just message me.

Then Google for the Savage Gulf area of southeast Tennessee. Nice trails, waterfalls, etc., and not too tough on the kiddies. Plenty of loop trails or you can do an overnight. Don't overlook the Fiery Gizzard, though it's not actually in the Savage Gulf.
