You sure you like the extra room enough to carry a 4 pound tent when you could carry a 10 oz tarp?

When is your start date?
Also, I wouldn't mess around with sleeping bags. Get western mountaineering, montbell, or marmot. Mountain Hardwear is also good, but not as good as the other 3.
Thermarest trail lite pad

a 2.5 pound sleeping pad? Probably not worth it. Big Agnes makes really comfortable pads that are far lighter, if you really don't want to go with a foam pad.

Water
MSR miniworks EX
Filtering water is a pain, and a filter is heavy. Switch to aqua mira, or if you don't like waiting to drink your water and are afraid of not purifying get one of those UV pens
MSR 4Liter DromLite
no need for a water bag on the AT
2 32oz Nalgene bottles
why nalgenes? Heavy and in no way better or more durable than gatorade bottles.

Cook
MSR simmerlite/11oz bottle
White gas makes very little sense on the AT. I think it's actually more of a hassle than alcohol stoves.

leave the lid at home and use a piece of tinfoil

Down is way better than synth. I started with a synthetic jacket that I would definately replace with a W. Mountaineering Flight vest if I were going to want a piece of insulation

Those boots are probalby going to be a good thing if you don't decide that you care about going lightweight
