I am looking to follow the weather for my upcoming trip with it being so warm. I wanted to know where the best sites are monitoring forecasted weather for 10 days from now for the Smokies.

This site (http://www.highcountryweather.com/) gives a pretty good forecast for the NC Mountains, but nothing will correctly predict ten days out in the Smokies. Maybe the Farmer's Alamnac?
Expect a little of everything in early March. Some warm days, lots and lots of wind, some rain, some snow, some very cold nights.

Like what was said before, any weather forecast is suspect more than 5 days out. You can look at weather.com, wunderground.com, or accuweather.com
if i want to know the weather, I just poke my head out the door. works for me... Otherwise I use intellicast.com

Try these:
noaa's forecast for Gatlinburg, TN:
http://www.srh.noaa.gov/forecast/Mapclick.php?site=mrx&map.x=193&map.y=181
Air Quality monoriting sites within the park:
Look Rock:
http://www2.nature.nps.gov/air/webcams/parks/grsmcam/grsmcam.cfm
Purchase Knob:
http://www2.nature.nps.gov/air/webcams/parks/grsmpkcam/grsmpkcam.cfm
The air quality links don't give you a forecast but they do give current temperature, humidity, wind speed and hourly precipitation totals. You could compare that data to the Gatlinburg data to get an idea of what it's actually like up in the mountians.
As for a 10 day hike though, be prepared for everything this early in the year. No 10 day forecast is worth a d@%! Statistically a 24 hour forecast is over 90% accurate but a seven day forecast is just over 50%. It nose dives from there.
Hope this helps.

If you are camping, and you are out there, and you are prepared, then the weather doesn't matter!!! The 10 day forecast is for your amusement only!!!
