Yum.

I'll be bringing my own corned beef recipie to be eaten the first two days on the trail.

I boil the corned brisket in onions, beer, garlic cloves, dill, basil leaves for 5 hours.

Cut and wrap brisket in two. Bring a good stone ground mustard or horseradish for topping.

For me, I never slice it against the grain as it destroys the tecture. Slice with the grain.

Did you say, “... BOIL ... for 5 hours.”?

Are you using a Crock Pot?

How about bring to a boil, then reduce to a simmer, and continue for 5 Hours?

I realize Native Americans preferred to slice meat with the grain, but I thought slicing against the grain was to make meat more tender. I suppose, if you actually keep everything boiling for five hours, you may have made soup anyway.

Needing more than mere luck.

Do you plan to create this every time you're in town, before you return to the trail?
