Are you looking for books about/by hikers and their dogs or books about hikes to take with a dog? If the later, check out the "Best Hikes with Dogs" series published by Mountaineers Books (www.mountaineersbooks.org). There are number of titles in the series, each covering a geographical area.

There's a list at http://booksforhikers.com/hiking-backpacking-outdoor-skills/hiking-with-pets/. If your local library doesn't have these books, ask them how you can request them through interlibrary loan. That way, you can see which one(s) you like best without having to buy them sight unseen. Of course, if you live in a big city, there may be a large bookstore there that has them on the shelf and you can take a look at them.

i found the best source to be the internet, i bought one book on backpacking w/ dogs, but i didn't learn anything that i hadn't already seen online. the hiking w/ fido pdf on this site was the best: http://www.appalachiantrail.org/site/c.jkLXJ8MQKtH/b.795337/k.9784/Hiking_with_Dogs.htm it was written in 89, so some stuff is a little out of date, but still very good, and realistic

i remember another really good article, but i can't seem to find it right now, its probably mentioned somewhere w/in the dog forum?
