I bought a foam cell 14oz Thermarest pad and it is longer than I am, would it be ok to trim it?

Sure, you can trim a foam pad, its not going to deflate.

Absolutely. But be sure to use a very sharp cutting tool, or well made scissors to avoid leaving rough jagged edges along the cut. Sometimes closed cell foam is awkward to cut with a regular knife.
