Is it even possible to leave early june with some of the parks being closed? If so, how difficult would that make things?

Which parks are you talking about? Baxter is open and the trails to Mt K are opening each week. I'm starting a SOBO section hike in only 9 sleeps!

there are no closed parks on the AT in early june

Not easily. The winter season ends in March most years. But to summit the mountain, one needs a party of four, all hiking together and all with experience winter technical hiking, winter technical gear, and with a leader that meets park qualifications.
And even once you climb Katahdin, you'll face severe winter conditions through Maine, New Hampshire and Vermont.

looks like a perfect day for climbing to me...
