Here are two recipes I have used:
1/2 C firmly packed brown sugar
1/2 C cup honey or molasses
1/2 C peanut butter (I like extra crunchy)
3 C Kashi Go-Lean Cereal (Protein/High Fiber Cereal)
1 C Sunkist mixed fruit bits (or more..)
melt the sugar, honey and PB in the microwave for a minute or more. Mix well.
Stir in the cereal and fruit. Stir well until blended. Press into an 8 X 8 square pan. Let sit for 1 hour or until firm. Cut into 16 bars.
2 T butter
1/2 C peanut butter (I like extra crunchy)
4 C mini-marshmellows
6 C Kashi GoLean Cereal (Protein/High Fiber)
1 C Sunkist mixed fruit bits (or more...)
melt the butter and PB in the mircowave for 1 - 1 1/2 minutes. Add marshmellows. Microwave until marshmellows are puffed and melting 1 - 1 1/2 minutes. Stir well. Add cereal and fruit. Stir well until blended. Press into a 9 x 9 square pan. Let sit 1 hour or until firm. Cut into 20 bars.
I keep these in the freezer or frig and Jed will add to my maildrop box just before he send it. Would make a great breakfast to go or pick me up snack.
