Kirk and I shot this video back in August but only recently had time to finish it up. It was shot at Hurricane Ridge in Olympic National Park.

One Pot Asian Inspired Chicken & Veggies

In a sandwich bag:
4 ounces small pasta shapes
1 Tbsp diced dried tomatoes
1 Tbsp diced dried carrots
1 Tbsp diced dried shallots or onions
1 Tbsp diced dried spinach
1 ½ tsp low sodium chicken bouillon
½ tsp chives
¼ tsp dried garlic
¼ tsp Thyme
¼ tsp ground pepper

Also bring:
1 7-ounce pouch of chicken
1 Tbsp (3 packets) shelf stable Parmesan cheese
2 packets soy sauce (2 tsp)

Bring the dry ingredients, chicken, soy sauce and 1½ cups water to a boil in your pot. Cook, covered, on low heat (gently bubbling) for 7 minutes. Turn off heat and let sit for 5 minutes covered. Add in the cheese, stirring well.

Serves 1 large appetite, 2 smaller ones.

That's almost a 1lb meal! I aim for about 1.5lbs of food a day, and most of that is in snacks. Whoa!

Maybe the chicken should be dehydrated?

Yes, the chicken can be dehydrated - or one can use freeze dried chicken.

The meal isn't aimed at weight cutters though ;) Most of the one pot meals I do tend to more about eating good versus saving weight (that is what the FBC meals are for) :D

On the other hand, that meal has ended up being the "one" that my buddy HD expects me to make him on cold days :p

Sounds good. It inspires imagination, depending on what you have in your pack.
I've tried similar using eggs(from powder) and beef jerky.

Along those lines, here's something that works great for two people:

*Boil some water
*Add a little powdered milk
*Toss in a small can or pouch of chicken
*Add whatever spices you happen to be carrying
*Add some diced onion or green pepper (I always leave town with both)
*Let it cook for a few minutes
*Add more water if necessary, then add a container of stuffing
*Stir it occasionally, then leave it covered for a few minutes
*Toss in a cap of bourbon if you have it

Very nice meal for two folks. If you're feeling festive, bring along some corn or mashed taters and have your friend do 'em up on their stove (You can prepare amazing meals if you use two stoves!) Cranberry sauce is a nice touch, too. We've done this countless times on the Trail, and canned turkey works as well as chicken, makes for a sort of Thanksgiving in the woods.

Jack, what I do for double items is make one in a bag, stash it in a cozy, then do the second half in the pot :) (What I call FBC Hybrid)

Btw, you can make some tasty cranberry sauce using dried cranberries (http://blog.packitgourmet.com/2008/11/camp-cranberry-sauce.html).
