Since Sarah posted her recipe from this weekend, I thought I'd post mine too. :) All of the ingredients can be purchased at the regular grocery store (At least in the Seattle area - YMMV)

Rice Noodles with Peanut Sauce
Serves 1
1/4 cup dried mixed vegetables
1/2 cup rice noodles, broken up (not too small)
3 tablespoons dry peanut sauce mix (http://www.atasteofthai.com/index.php?page=product&action=viewcat&id=3)
2 tablespoons coconut creme powder (http://www.freezerbagcooking.com/utensilskitchengear.htm#231131206)
At home: combine everything in a zip locking plastic bag.
In camp: bring about 1 cup water to a boil. Add contents of bag to pan. Stir and allow noodles to soften and vegetables to rehydrate. This can also be done FBC style, but just adding the water to the bag and stirring.
