Is there any suggestions for managing the aluminum taste that you get with these pots? I hate it when my soup turns out a bit metallic. I cant really get my whisperlite to simmer so I'm on full blast when I cook with it. Could that possibly be a problem?

Yea, you need to knock it down or use a diffuser plate.
