This is a very newbie question, but I'd rather be safe than sorry -- camping can be done outside of designated camping grounds, right?

For almost the entire trail you can throw down where ever you like.

Generally so, yes, depending on where you are. A few places, such as the Smokies, are restricted.

all seems to depend on your "groupie" that u fall in with. Some never, ever stop at shelters. Others prefer shelters and carry only a light tarp as emergency back-up. You'll develop a taste as experience is found. Pack light or experience misery is the first learned for me.

There are places with restrictions and /or backcountry guidelines. The national parks, some state parks, some states as well (like CT I believe). Also the Whites (like by the huts and above treeline).

I know you can't camp near the Huts in the Whites...or so their care takers told me

All the above restrictions are either well-signed or noted in the AT guidebooks, so it's easy to plan your night. You shouldn't be surprised anywhere with no place to camp.
