Rice and Veggies with Peanut Sauce
Serves 1

1/3 cup instant rice
3 tablespoons powdered peanut sauce mix
2 tablespoons coconut crème powder
3 tablespoons dried mixed vegetables
1-2 tablespoons plain TVP (optional, but it adds extra protein)

At home: combine all of the ingredients in a zip locking plastic bag.

In camp: add enough hot water to cover, stir well and let sit until the rice is cooked and vegetables are rehydrated. Stir again before eating.

I've been a fan of peanut sauce on the Trail for years and have posted how I make it on other threads. I also use instant rice but it also works with couscous and bulgur wheat.

Question: when you refer to "powdered peanut sauce mix," is that something you buy? I make my own mix simply by grinding dry-roasted peanuts in the blender at home and putting it in a baggie. I then add it to the simering water along with the dried veggies and starch.

When buying peanuts to grind, don't use the Planters or other corporate peanuts which have HFCS in them (really!).

Di and I find powdered peanut sauce mix in Asian grocery stores (think for satay) though your method is just as tasty I would bet!

I have also used powdered low fat peanut butter with good results (cool stuff).

I've also found it in the regular (more upscale) grocery stores. I think the brand name is Taste of Thai? Two packets to a package, and each packet will make two of the above meal...

The nice thing about the peanut sauce mix (vs just ground peanuts) is that it contains spices etc along with it.

Sarbar got to taste a similar version of this meal earlier this year - that one was made with rice noodles instead of instant rice... LOTS of options! One of the things I love about backcountry cooking. :)

Dicentra, since I first read one of your posts awhile ago recommending the Peanut/ coconut sauce combo I've wanted to try it. Well I can say I've tried it several times over noodles and rice. It's a winner!

From the website you cited: "Keep in mind that ingredients and formulations change. The information shown here may vary from the content and label information of products currently in stores..."

Last time I looked at a label, the ingredients in Planters were not just "peanuts." Granted, I've stopped looking; I buy my peanuts from Amish stores or health food stores.

Sorry but I get nuts about my nuts. Roasted Unsalted Nuts contain no High Fructose Corn Syrup. Such as the ones from planters that i bought last week and am eating right now.

Of the dry roasted varieties of Planters, the regular, lightly salted, and honey all have some form of corn syrup listed in the ingredients.

All I see is Peanuts

If you guys have rougue nuts that have alternative ingredients in them then yah I agree. I just know my nuts are just nuts (i had a mild panic attack when you mentioned high fructose corn syrup in my nuts).

They list cornstarch. I will have to see that in person. Maybe I can eat them again.:sun
